Nanobubbles in Dishwashing

Nanobubble technology is applied to dishwashing water to support removal of grease and food residue and better cleaning performance. In dishwashing at restaurants, institutional catering and commercial kitchens, it helps improve wash quality and use detergent and water more efficiently.

Limits of existing dishwashing processes

Grease and stuck-on food tend to remain depending on wash conditions, and at peak times it is hard to maintain cleaning quality within the set cycle.

  1. Removing grease and stuck-on food

Contaminants such as grease, protein and starch on dishes can remain depending on wash conditions, so separate pre-washing or rewashing may be needed.

  2. Detergent, rinse aid and hot water burden

Commercial dishwashing incurs ongoing operating costs for detergent, rinse aid, heating energy and water.

  3. Maintaining quality in high-volume washing

At peak times, contaminant removal and consistent cleaning quality must both be secured within the set wash cycle.

Role of nanobubble dishwashing water

  1. Supports removal of grease and food residue Nanobubble water applied to the wash process supplements the cleaning action of detergent and helps remove grease from dish surfaces.
  2. Linked to existing wash and rinse processes Existing dishwashers and wash programs stay as they are, and nanobubble water is supplied through the water feed.
What Are Nanobubbles

Expected benefits of nanobubble dishwashing water

Nanobubble water supplements the cleaning action of detergent, helps remove stubborn contaminants and can contribute to better wash quality and optimized detergent and water use. Honour Tech's dishwashing application is currently at the 'early market' stage, and all benefits below are expected benefits.

Validation status of cleaning performance

Honour Tech compares and evaluates the cleaning performance of nanobubble water in several cleaning fields and presents in-house test results and research papers separately.

Frequently Asked Questions

Common questions about grease removal, existing dishwashers and chemicals, wash temperature and time, hygiene management and operating costs.

Does nanobubble water help remove grease and food residue from dishes?

Nanobubble water can be considered as a way to complement the mechanical cleaning action of existing detergents and dishwashers and improve removal of grease and food residues.

Commercial dishwashing deals with many soils, including grease, protein and starch. Removal performance depends on detergent type and concentration, wash water temperature, spray pressure and wash time.

Nanobubble water can be applied as wash water supplied to the existing dishwashing process. However, Honour Tech's dishwashing application is currently at the "early market" stage, and cleaning performance and operating benefits in the dishwashing process itself must be confirmed separately. Test results from surface cleaning are not applied directly as commercial dishwashing performance.

Can existing dishwashers, detergents and rinse aids still be used?

Application can be considered by adding a nanobubble water supply while keeping existing dishwashers and detergent and rinse aid conditions.

Commercial dishwashers differ in wash water circulation, water supply and detergent and rinse aid dosing depending on their design, such as door-type or conveyor-type. It is therefore necessary to first confirm which water supply line nanobubble water should feed.

Honour Tech reviews dishwasher type and number, hourly water supply, supply water temperature and existing detergent and rinse aid conditions to determine a suitable HQN system. In initial tests, it is appropriate to keep the existing wash program and chemical conditions and to consider adjusting operating conditions after confirming the cleaning effect.

Can nanobubble water lower dishwashing temperature or wash time?

Improved cleaning performance may allow wash conditions to be optimized, but it cannot be concluded that introducing nanobubble water alone will lower wash temperature or time.

In commercial dishwashing, temperature and time affect not only grease removal but also hygiene and the operating conditions of the wash program. Thermal sanitization conditions in particular must meet the required standards, so they must not be changed arbitrarily on the basis of improved cleaning power alone.

It is appropriate to first compare cleaning results with ordinary water and nanobubble water at the existing temperature and wash time, then, if an effect is confirmed, adjust and evaluate wash conditions step by step. The hygiene standards applicable to the facility must be checked as well as soil removal performance.

Does washing dishes with nanobubble water also disinfect them?

Cleaning with ordinary air or oxygen nanobubble water must be distinguished from disinfection and sanitization processes aimed at reducing microorganisms.

Nanobubble water can be used as wash water that helps remove soil from dish surfaces, but the presence of nanobubbles does not in itself ensure a disinfecting effect. Dish hygiene must follow the required procedures and standards, such as the existing dishwasher's thermal treatment or approved disinfection methods.

A separate microbial reduction process using an oxidizing gas such as ozone can be considered, but dissolved ozone concentration, contact time, safety in the use environment and relevant hygiene standards must be confirmed separately. Honour Tech treats cleaning performance and hygiene performance as separate evaluation items.

Can a nanobubble system reduce dishwashing costs?

Once the cleaning effect of nanobubble water is confirmed, operating conditions such as detergent and rinse aid use and the burden of rewashing may be optimized.

Commercial dishwashing costs consist of detergent, rinse aid, water, heating energy, power and maintenance. Adding a nanobubble system brings its own operating costs, so the degree of cleaning improvement and the added cost should be compared together.

It is appropriate to review chemical use, water supply, rewash frequency and operating time step by step while maintaining existing wash quality and hygiene standards. Honour Tech recommends evaluating economics on the total operating cost needed to achieve the same cleaning and hygiene targets.
